Food Svc Production Manager Facility:St. Catherine of Siena Nursing
and Rehabilitation Location:Smithtown, NY Department:Food &
Nutritional Services Category:Service and Trade Schedule:Full Time,

MAIN FUNCTION
Responsible for planning and supervising the preparation and
service of meals to residents, staff and volunteers in an
expeditious manner, according to established departmental policies
and the State Sanitary Code.
JOB RELATIONSHIPS
Reports to The Director of Food Service.
QUALIFICATIONS
A. Education: Completion of 90 hour Dietary Managers Course.
B. Experience: Must have minimum 3 years supervisory experience in
S.N.F. Food Service Department.
C. Misc. Requirement: Must have leadership ability and an aptitude
for detail and human relations.
DUTIES AND RESPONSIBILITIES
+ Supervises activities of kitchen staff, coordinating chef, diet
and kitchen aide assignments to insure economical and timely food
preparation.
+ Assures that all dietary production policies and procedures are
followed.
+ Plans and/or participates in planning menus, special functions,
and utilization of foods and leftovers.
+ May develop and standardize recipes.
+ Assures correct storage and inventory of food and supplies,
reports ordering requirements to FSD.
+ Supervises personnel in maintaining high standards of sanitation,
safety and security practices in accordance with nursing home
policies.
+ Assists in orientation, on-the-job training and in-service
education programs for dietary personnel.
+ Operates a station during the shift by selecting a position from
which to gauge the work flow and productivity of subordinates.
Provides direction for relief and volunteer as conditions
indicate.
+ Advises Department Head of employees progress and problem areas.
Communicates to employees concerning status and areas requiring
emphasis. Recommends corrective actions, gives employees verbal or
written counseling where warranted.
+ Trains and orientates new personnel in accordance with correct
processes and procedures for performance of assigned duties.
+ Knows fire plan, disaster procedure and is aware of the OSHA
regulations such as Hazard Communication/Right-to-Know Laws.
+ Performs other duties as requested or in emergencies as
assigned.
